Ingredients
  • 6 real firm small bananas, peeled and cut in half crosswise
  • 1/4 cup melted butter
  • 1/2 cup hard packed light brown sugar
  • 1/4 cup finely chopped nuts
  • 1 egg white
  • 12 eggroll wrappers
  • oil, for frying
  • powdered sugar

Directions
  1. Heat oil in deep fryer to 300*
  2. Prepare bananas.
  3. In a small dish, melt butter in the microwave.
  4. In another small dish, blend together brown sugar and nuts.
  5. On a flat surface, place down 12 eggroll wrappers to where you see a diamond (not a square).
  6. (I do it production line style).
  7. Next, pick up a banana half, and dip it in the butter.
  8. Roll it in the sugar-nut mixture.
  9. And place it in the center of the eggroll wrapper.
  10. Fold in the sides, then fold up the bottom.
  11. With your finger, apply egg white to the top flap and fold the top down, sealing the eggroll.
  12. When your oil is hot, carefully drop the eggroll into the oil, 2 at a time.
  13. When it is golden brown on the bottom, turn over and brown the other side. About 5 minutes total for each pair of eggrolls.
  14. Drain on paper towels.
  15. Sprinkle with powdered sugar.
  16. Serve warm.
