How to make it

  • Heat oil in deep fryer to 300*
  • Prepare bananas.
  • In a small dish, melt butter in the microwave.
  • In another small dish, blend together brown sugar and nuts.
  • On a flat surface, place down 12 eggroll wrappers to where you see a diamond (not a square).
  • (I do it production line style).
  • Next, pick up a banana half, and dip it in the butter.
  • Roll it in the sugar-nut mixture.
  • And place it in the center of the eggroll wrapper.
  • Fold in the sides, then fold up the bottom.
  • With your finger, apply egg white to the top flap and fold the top down, sealing the eggroll.
  • When your oil is hot, carefully drop the eggroll into the oil, 2 at a time.
  • When it is golden brown on the bottom, turn over and brown the other side. About 5 minutes total for each pair of eggrolls.
  • Drain on paper towels.
  • Sprinkle with powdered sugar.
  • Serve warm.
