Apricot Scones with Devonshire Cream

- 2 cups flour shopping list
- 1/4 cup sugar shopping list
- 1 tablespoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- 1/3 cup cold butter shopping list
- 1/2 cup chopped dried apricots shopping list
- 1/2 cup chopped pecans shopping list
- 1 teaspoon grated orange peel shopping list
- 1 cup whipping cream shopping list
- 2 tablespoons whipping cream shopping list
- Faux Devonshire cream shopping list
- 1 3-ounce package cream cheese, softened shopping list
- 1 tablespoon powdered sugar shopping list
- 1/2 teaspoon vanilla shopping list
- 1/4 to 1/3 cup whipping cream shopping list
How to make it
- Combine flour, sugar, baking powder and salt in a bowl.
- Cut in butter until mixture resembles fine crumbs.
- Add apricots, pecans and orange peel.
- With a fork, rapidly stir in 1 cup whipping cream until moistened.
- Turn onto floured board. Knead 5 or 6 times.
- Divide dough in half and shape each half into a ball.
- Roll each ball into a 6-inch circle.
- Cut each circle into 8 wedges.
- Place wedges 1 inch apart on ungreased cookie sheet.
- Brush wedges with 2 tablespoons whipping cream.
- Bake at 375 degrees for 15 to 20 minutes or until golden brown.
- Serve with the faux Devonshire cream and jam.
- For faux Devonshire cream: Beat until fluffy the cream cheese, powdered sugar and vanilla.
- Gradually beat in whipping cream to achieve spreading consistency.
- Cover and chill 2 hours.
