Curry Potato Salad Recipe

Ingredients

3 lbs red potatoes, peeled and cubed

2 hard boiled eggs, chopped

hand full of chopped fresh curry leaves

1 cup chopped celery

1 cup chopped red onions

1/2 cup sliced green onions

1 teaspoon cracked black pepper

1 cup sour cream

2 tablespoons olive oil

1 teaspoon celery seed

1 teaspoon brown mustard seed

1 teaspoon garlic powder

salt to taste

Directions

Boil potatoes until tender, drain

In a large bowl, mix together the potatoes, onions, celery, and eggs.

Mix together in a small bowl, the sour cream, olive oil, celery seed, mustard seed, cracked pepper, and garlic powder.

Pour dressing over potatoes and stir to coat potatoes.

Stir in curry leaves and green onions.

Season with salt.

Serve

Optional: sprinkle with curry powder and/or cumin
