ORANGE CAKE

- 300g margarine (and not lite or non fat) shopping list
- 800g sugar shopping list
- 16 eggs shopping list
- 800g flour shopping list
- 30g baking powder shopping list
- 5g salt shopping list
- 5 Medium oranges shopping list
- fresh orange juice shopping list
- Extra sugar shopping list
- 250ml rum (optional - but now and then I replace it with another liquid for variation) shopping list
- 250ml milk shopping list
- 300g sugar (for syrup) shopping list
- orange peels (For syrup) shopping list
- saffron strands (For syrup) shopping list
- 1lt water (for syrup) shopping list
- gelatine shopping list
How to make it
- Cream margarine and 800g sugar
- Add eggs one by one, working each one in thoroughly
- Mix flour, baking powder and salt.
- Add this to the egg mix
- Boil oranges for 2 hours, replacing the water thrice
- Cut in half and remove the seeds
- Liquidize skin and all
- Add enough sugar and fresh orange juice until it is of amousse consistency
- Add the egg-flour mixture with rum
- Mix well
- Add milk
- Mix well
- Pour into a greased ban and bake at 180deg C for 1 hour
- SYRUP: (I make this whilst the cake is in the oven)
- Blanch orange peel cut in thin strips in water for half an hour.
- Replace water and simmer for another half an hour on low heat
- Melt 300g sugar in 1lt water and bring to a boil
- Add some orange peel and saffron strands
- Boil on high until it starts to thicken.
- Add some gelatine
- Let it cool a bit before you pour syrup over hot cake
