How to make it

  • CRUST
  • dissolve coffee in water. dip each biscuit into coffee to soften and line a large baking pan with 2 layers of cookies
  • (i used a ready pie crust. i dont like tea biscuits and its quicker. i had some mixture leftover but my hubby didnt mind!
  • MOUSSE
  • boil cocoa, coffee, sugar, water and chocolate. once the chocolate is melted, remove from heat and add marg.
  • mix untill it melts
  • add yolks one add a time, mixing between yolks
  • beat whites till stiff
  • fold chocolate mixture into whites and pour over crust. freeze.
  • CREAM
  • beat whip and add sugar . combine rest of ingredients and pour over frozen mousse. freeze

    i used bitter sweet cooking choc. also i forgor to mention that i crushed some choc. coated espresso coffee beans for the topping.
