Ingredients
  • 6-8 slices white bread
  • butter
  • 2c cooked cooled rice
  • 4 rashers of bacon, chopped and partially cooked
  • 2/3c grated cheddar
  • 4 eggs
  • 1/4c cream
  • 1/4 bunch of chopped parsley

Directions
  1. Preheat oven to 400F(200C) Grease a 8-9" springform pan with melted butter. Cut crust off bread; butter each slice. Line tin with bread butter side downwith the corners sticking up.
  2. Place rice, bacon, cheddar, and parsely in a bowl, mix together. Beat the eggs and cream together and add to the rice mixture.
  3. Spoon rice mixture into bread lined tin; Bake 15-20 minutes or until rice mixture is firm and bread is golden brown and crisp.
  4. Serve immediately.
