How to make it

  • Melt butter and olive oil in a dutch oven.
  • Add onion, carrots, red pepper, potatoes, and chiles
  • Cook until veggies are very tender, about 20 minutes.
  • Add chicken and cook until opaque.
  • Add flour and cook 1 minute.
  • Add milk, spices, and corn.
  • Bring to a low boil and cook until thickened, about 5 minutes

    Made this for lunch today. I used some chicken I had already cooked, 1 breast and 2 thighs, that I took the skin off of and pulled. For the chilies I used a 4 oz. can of green chilies and 1 chipotle pepper in adobo with a bit of the adobo sauce. It gave it a nice smoky and spicy flavor. It took a while longer than the 20 minutes for the potatoes to cook, so I just let them finish cooking after I had added the milk. I let the soup cook covered for about 20 minutes, stirring occasionally, after I added the milk. The only thing that was missing from the final product was salt. I don't know how much I added, just enough to suit our taste. Very good, and thanks for the recipe!!
