Easy Blueberry Lemon Bars

Make this while blueberries are in season and inexpensive, too. Light, lemony and just think how good those blueberries are for you! This MUST be healthfood. From Southernfood.com via the Pittsburgh Post-Gazette
Ingredients
- 2 c. fresh or frozen blueberries shopping list
- 1 T. sugar shopping list
- 2 T. fresh lemon juice shopping list
- zest of 1 lemon, divided shopping list
- 1 box yellow cake mix shopping list
- 4 eggs shopping list
- 1 stick butter, softened shopping list
- 2 3/4 c. powdered sugar shopping list
- 8 oz. cream cheese shopping list
How to make it
- Preheat oven to 325.
- Combine blueberries with sugar, lemon juice and half of the lemon zest. Set aside.
- Mix cake mix with 1 egg, butter, and the rest of the lemon zest. Pat into a buttered and floured 13X9 baking pan.
- Beat powdered sugar, cream cheese, and remaining 3 eggs until smooth. Gently stir in blueberry mixture; pour over cake. Bake 45-55 minutes, or until browned. Let cool completely; chill and cut into squares. Dust with powdered sugar.
