Picnic Berry Cake

Berries are my fave and so are the cream cheese . Mixing the chocolate chunks with them in a buttermilk soften cake simply is ..... as my son put it ' fantastico '
Ingredients
- 114 g butter shopping list
- 1 1/4 C plain flour , 1 tsp baking pwd , 1/2 tsp salt - sifted shopping list
- 3/4 C sugar shopping list
- 2 L eggs shopping list
- 1/3 C buttermilk shopping list
- 3 oz baking chocolate chunks shopping list
- 3 oz white chocolate chunks shopping list
- ........................................... shopping list
- icing : shopping list
- 8 oz cream cheese shopping list
- 3 tbsp blackberry ( OR strawberry jam ) shopping list
- 1/4 C icing sugar , sifted shopping list
- ...................................................... shopping list
- Topping : shopping list
- Fresh Blackberreis ( OR strawberries ) shopping list
How to make it
- Pre heat oven at 180 deg C .
- Grease a 9 inch square pan .
- Beat the sugar and butter for 5 mins until softer .
- Add the eggs and beat until well mixed .
- Add the buttermilk and beat for 1 min .
- Add the sifted ing. and mix well .
- Fold in the chocolate chunks .
- Bake for 40 mins .
- Cool and remove from pan .
- .............................................
- Beat the icing ing. for 5 to 6 mins until creamy .
- Spread on the cake .
- Arrange the berries on top and chill for 1 hour before serving .
