How to make it

  • --For Gratinata Sauce:
  • In a Dutch oven, over medium-high heat, saute butter, garlic and rosemary until garlic begins to brown, but do not burn the garlic.
  • Add marsala wine and reduce by 1/3.
  • Add remaining ingredients and reduce by half of original volume, stirring frequently. Set aside.
  • --For Penne Rustica:
  • In the meantime, In a large skillet, saute pancetta until it begins to brown.
  • Add butter, shallots and shrimp. Cook until shrimp are pink but still translucent, don't over cook, or you'll be able to bounce them off the kitchen floor (rubbery).
  • Add chicken, salt and pepper; mix thoroughly.
  • Add Gratinata sauce and 1/2 of parmesan cheese and simmer until sauce thickens.
  • In a large bowl, combine shrimp and chicken mixture with precooked pasta.
  • Place mixture into a large baking dish.
  • Top with remaining cheese and pimentos, and paprika.
  • Bake at 475* for 10-15 minutes.
  • Remove and garnish with fresh rosemary sprigs
