Sweet Zucchini Pickles Recipe
I usually make these each year.. I cut the zucchini into cubes rather than slices so it's sort of in between a pickle and a chunky relish... I don't know how long it takes to prep.. since I do a huge amount at a time..

Ingredients
  • 4 quarts Zucchini... cut into 1-inch cubes or into slices...( i use the big over sized ones ... peel and take out the seed core...)
  • 6 cups onions, sliced thin
  • 5 cups white sugar
  • 2 large green peppers, cut
  • 2 cloves garlic
  • 1 1/2 teasp. celery seeds
  • 2 TBSP. mustard seeds
  • 1 1/2 teasp. turmeric
  • 2 cups apple cider vinegar
  • 1/2 cup salt
  • ice cubes

Directions
  1. if the zucchini is young and the peel is tender you can leave it on...
  2. slice the peppers and onions to about the same size as the zucchini
  3. place in large bowl ...add garlic
  4. cover the veggies with the salt and cover with ice cubes
  5. let stand for 3 hours
  6. drain
  7. combine all ingredient in a large non-aluminum pan and heat to just boiling
  8. fill canning jars ( i use quarts ) seal and follow the blue book for sealing in a water bath
