Pesto Eggs Recipe
This is a fantastic side dish that pairs well with grilled meats, but it also address the concerns that a number of people have about cholesterol and egg yolks in traditional deviled eggs.

Ingredients
  • 6 large or extra large eggs
  • Pesto (purchased)
  • Finely minced red or sweet onions
  • grated Parmesan

Directions
  1. Boil eggs by placing eggs in tap water and bring to boil. Immediately remove from heat and cover and let sit for 15 minutes. Use a timer and do not overcook. If using extra large eggs add two minutes. Remove and run cold water over eggs to stop cooking. Shell and cut in half. Remove and discard yolks.
  2. Mix pesto and small amount of finely minced onion and grated Parmesan place in shells. Refrigerate.

How pretty these must be. Great for a party.

When I first was married I'd never cooked. I was so insecure I read three different cookbooks' instruction about how to boil eggs and then just averaged that out. Voila' Just as you instruct!
Your great basic instructions are likely making a lot of kitchen novices very appreciative.
