How to make it

  • Cream together the butter or margarine and the grated lemon rind until soft.
  • add the sugar and beat until light and fluffy. (about 5 minutes)
  • Sift the flour and add a little of it to the mixture. Alternately add the remaining flour and the eggs to the mixture beating well after each addition.
  • Cut the cherries in half and toss in flour. Add to the cake mixture and mix well.
  • Butter and flour an Bundt cake pan.
  • Pour cake mixture into the prepared pan and bake in 325 degree oven for approx. 1 1/2 hour. Leave the cake in pan until almost cool.
