This recipe is easy. If you don't like spicy, simply omit the red pepper and use regular smoked sausage. I came up with this one day when I didn't have alot of time to prepare dinner, and it quickly became a family favorite.

Ingredients
  • 1 lb. spicy smoked sausage (or regular smoked sausage) , cut into thick coins
  • 1 med. onion, chopped
  • 1/2 green pepper, chopped
  • 2 T. margarine
  • 1/2 t. crushed red pepper
  • 1 16 oz bag california blend vegetables (carrot, cauliflower, broccoli blend), thawed
  • 1 4 oz can mushroom stems and pieces
  • salt and pepper to taste

Directions
  1. In a large skillet, saute green pepper and onion in the margarine.
  2. Add sausage, mushrooms, vegetables, mushrooms and red pepper flakes.
  3. Cook over medium heat until heated through.
  4. Serve over hot rice or noodles
