Carrot cake

a favorite of my husbands. Has to be made for ever special occasion for him.
Ingredients
- 2 cups sugar shopping list
- 1 1/2 oil shopping list
- 3 cups grated carrots shopping list
- 1 cup chopped walnuts(optional) shopping list
- 1 cup raisins(optional) shopping list
- 3 tsp cinnamon shopping list
- 4 eggs shopping list
- 1 tsp salt shopping list
- 2 cups flour shopping list
- 2 tsp baking soda shopping list
- 1 tsp baking powder shopping list
How to make it
- Combine dry ingredients in a samll bowl.
- In a large mixing bowl cream together eggs and sugar add oil Slowly add dry ingredients and blend together well.
- Add carrots, nuts and rasins.
- Bake in a greased and floured pan on 300 for 35-45 min.
- watch carefully after the first 35 min until center of cake comes out clean with a toothpick.
- Top with a cream cheese frosting and enjoy.
