Ingredients

2 cups sugar

1 1/2 Oil

3 cups grated carrots

1 cup chopped walnuts(optional)

1 cup raisins(optional)

3 tsp Cinnamon

4 Eggs

1 tsp salt

2 cups flour

2 tsp baking soda

1 tsp baking powder

Directions

Combine dry ingredients in a samll bowl.

In a large mixing bowl cream together eggs and sugar add oil Slowly add dry ingredients and blend together well.

Add carrots, nuts and rasins.

Bake in a greased and floured pan on 300 for 35-45 min.

watch carefully after the first 35 min until center of cake comes out clean with a toothpick.

Top with a cream cheese frosting and enjoy.
