Ingredients
  • 1 and 1/2 cups quick cooking oats
  • 2 TBSP shortening
  • 2 cups boiling water
  • 1 cup molasses
  • 1 TBSP yeast
  • 1 cup warm water
  • 1 tsp sugar
  • 5 cups flour
  • 2 tsp salt

Directions
  1. Put oatmeal and shortening into a saucepan.
  2. Pour hot water in and stir well. Allow to cool before adding in the molasses. Mix well.
  3. Dissolve yeast and sugar in warm water.
  4. Pour the oatmeal mixture and the dissolved yeast mixture in a large bowl.
  5. Add the flour and salt and mix well.
  6. Cover and allow to rise overnight.
  7. Spoon into loaf pans and let rise again for 1 and 1/2 hours. (I always make them into rolls instead of loaves)
  8. Bake 30 minutes.
