Israeli Salad

- 2 medium roma tomatoes, cubed shopping list
- 1-lb. english cucumber, cubed shopping list
- 1/2 medium red onion, cubed, or 4 scallions, finely sliced (I use red onion) shopping list
- 1 bell pepper, cubed shopping list
- 3 Tbsp finely minced fresh, flat-leaf parsley shopping list
- juice of half a lemon shopping list
- 2 to 3 Tbsp olive oil shopping list
- 1 1/2 tsp sumac powder shopping list
- salt and pepper, to taste shopping list
- 1/2 to 1 cup crumbled or cubed feta cheese shopping list
- Optional additions: 1-15 oz can chickpeas, drained and rinsed, 1/2 cup coarsely chopped olives, 1 to 2 Tbsp finely minced mint or dill. For a thicker, sesame-coated flavor, whisk in a couple tablespoons of tahini. shopping list
How to make it
- Place chopped veggies in a large bowl. Set aside.
- Whisk together parsley, lemon juice, olive oil, sumac powder, salt and pepper in a small bowl.
- Toss mixture with veggies.
- Top with feta.

I like this very much! I am partial to Middle-Eastern dishes. I can find sumac & any other ingredient for mid-east cuisine, in my town. We have many turkish, arab, palestinian & other middle-easterners in our town. Thanks!
