How to make it

  • cut bacon in small pieces
  • slice tomatoes
  • wash and prepare spinach
  • have eggbeaters in cup

  • This recipe cooks quickly

  • heat pan
  • add oil or butter
  • when heated add spinach
  • bacon
  • and tomatoes
  • ------------
  • cook, swishing around with wooden spoon about 2 minutes on med high
  • ---------
  • season with spices of your choice and add eggbeaters all at once pushing from the sides as they cook
  • lower to medium
  • ---------
  • cook to the consistency you like and remove from heat just before done as they will continue to cook off the heat
  • ----------
  • Serve on a warmed plate

    This recipe will be perfect for my DH, who's on a very restricted diet ( no egg yolks, no pork, no beef, no sugar & on & on & on!) Thanks!

    Red ripe grape tomatoes are sweet and add contrast to the leafy spinach. The added veggie bacon gives just enough texture and adds that slightly smoky quality I like in my omelet. A perfect quick meal that is fulfilling.High five Joymarie
