Potato Pancakes or Erdaepfel Laibchen

- 2 medium-sized non-mealy potatoes shopping list
- 1 small onion shopping list
- 2 large eggs shopping list
- 1/2 to 3/4 cup flour shopping list
- 1/4 cup milk shopping list
- 3 TBS melted butter shopping list
- Pinch ground nutmeg shopping list
- salt and freshly ground black pepper to taste shopping list
- clarified butter or oil and butter for frying shopping list
How to make it
- Peel and grate potatoes into a small bowl.
- Fill the bowl with very cold or ice water; set aside.
- In a large bowl, beat together remaining ingredients until smooth. (Use 1/2 C flour at first, reserving the rest to use at need.)
- Chop the onion finely.
- Drain the grated potatoes and squeeze them dry in a dish towel.
- Add potatoes and onion to liquid and mix well. If quite runny, add more flour.
- Heat a griddle and grease it with either clarified butter or 1/2 oil, 1/2 butter. You want the butter flavor but it should not burn.
- Measure out 1/4 cup batter for each Laibchen. Press down with the back of a spoon and spread it out to flatten it a bit.
- Fry about 3-4 minutes or until brown; flip and cook other side.
- The first ones keep well on a platter in a very slow oven until the rest are done.
- You can also make a double recipe, freeze after cooking and reheat in a a 350° oven as needed.
