How to make it

  • Peel and grate potatoes into a small bowl.
  • Fill the bowl with very cold or ice water; set aside.
  • In a large bowl, beat together remaining ingredients until smooth. (Use 1/2 C flour at first, reserving the rest to use at need.)
  • Chop the onion finely.
  • Drain the grated potatoes and squeeze them dry in a dish towel.
  • Add potatoes and onion to liquid and mix well. If quite runny, add more flour.
  • Heat a griddle and grease it with either clarified butter or 1/2 oil, 1/2 butter. You want the butter flavor but it should not burn.
  • Measure out 1/4 cup batter for each Laibchen. Press down with the back of a spoon and spread it out to flatten it a bit.
  • Fry about 3-4 minutes or until brown; flip and cook other side.
  • The first ones keep well on a platter in a very slow oven until the rest are done.
  • You can also make a double recipe, freeze after cooking and reheat in a a 350° oven as needed.
