Jamaican Curried Chicken

- 2 lbs chicken parts (i bought it already quartered for curry...but you can use whatever cuts of chicken you prefer...bones give it a better taste though.) shopping list
- 1 lime shopping list
- a few dashes of soy sauce shopping list
- dash of pepper shopping list
- 1 tbs thyme shopping list
- 1 medium onion chopped shopping list
- 2 garlic cloves minced shopping list
- 3 tbs olive oil shopping list
- 1 chicken buillion cube shopping list
- 3 small-medium potatoes peeled and quartered shopping list
- 4-5 tbs jamaican curry powder shopping list
- dash of red hot sauce(optional) shopping list
- cooked white rice for serving shopping list
How to make it
- skin and trim excess fat from chicken parts
- rinse chicken parts with cold water and drain
- marinade chicken in juice of 1 lime, soy sauce and black pepper over night adding the thyme 15 minutes before cooking
- ***or marinade atleast 20 minutes with thyme included right before cooking***
- boil potatoes in a pot with the buillion cube and a few cups of water (more water may be added later during last step of cooking)
- meanwhile heat olive oil in a large pan
- add onions and garlic to pan and cook until tender
- add chicken and a sprinkle of curry powder to the pan and brown on both sides
- remove chicken, onions and garlic and add to the cooking potatoes
- stir in the remaining curry powder and more water
- lower heat to a slow boil
- cook until chicken is very tender and liquid thickens to desired consistency
- add a dash of hot sauce if desired
- serve with white rice
