Got this recipe from a sweet lady, Adeline, who used to go to the same coffee place as I do. She talked about a function she was going to and was taking this cake. It sounded so good and it tastes even better. Have had my own requests for this one. Read more Tastes better the second day. See less

- CAKE:
- 1 Golden Yellow cake mix ( I use the one with pudding in the mix)
- 4 eggs
- 1/4 cup apple sauce
- 1 10 oz tin ( the sizes vary, but an oz or 2 won't matter) mandarin orange drained, liquid reserved.

- TOPPING:
- 1 14oz tin crushed pineapple with juice
- 8 oz container Cool Whip
- a 3 1/2 oz pkg instant vanilla pudding

How to make it

Cake: Preheat oven to 350F
With mixer, beat all ingredients, except oranges, but including reserved liquid from oranges, , for about 2 minutes.
Stir in oranges by hand
Pour into greased and floured 9x13" cake pan.
Bake for 30-35 minutes, or until toothpick inserted in center of cake comes out clean.
Cool completely

TOPPING:
Mix dry pudding with pineapple and juice til combined and thick.
Fold in Cool Whip .
Put on top of cooled cake. Refrigerate a few hours to allow melding of flavors
