Ground Pork Adobo With Eggplant Recipe
This dish is a modified version of pork adobo so it's very easy. Goes amazingly with steamed rice. I never imagined I would be able to think of it!

Ingredients
  • Ground pork (1/2 Kilo)
  • 3 eggplants (each cut in 3 parts then sliced in the middle, lengthwise)
  • crushed garlic (depends how garlicky you want it)
  • 1 medium size onion
  • 1/2 cup soy sauce
  • 1/8 cup vinegar
  • 1 tablespoon sugar
  • ground pepper
  • 2 pc laurel leaves
  • cooking oil

Directions
  1. Saute garlic, onion and oil in a pre-heated wok until onions are transcluscent
  2. add ground pork and mix then cover the wok
  3. when there is almost no water anymore, add soy sauce and vinegar
  4. bring to a boil
  5. lower the heat then add the sugar
  6. mix until the flavor of the sugar already seeped in and almost starting to caramelize
  7. add the eggplants
  8. cover the wok until the eggplant is cooked
  9. add the laurel leaf
  10. serve with steamed rice!
