Ground Pork Adobo With Eggplant

- ground pork (1/2 Kilo) shopping list
- 3 eggplants (each cut in 3 parts then sliced in the middle, lengthwise) shopping list
- crushed garlic (depends how garlicky you want it) shopping list
- 1 medium size onion shopping list
- 1/2 cup soy sauce shopping list
- 1/8 cup vinegar shopping list
- 1 tablespoon sugar shopping list
- ground pepper shopping list
- 2 pc laurel leaves shopping list
- cooking oil shopping list
How to make it
- Saute garlic, onion and oil in a pre-heated wok until onions are transcluscent
- add ground pork and mix then cover the wok
- when there is almost no water anymore, add soy sauce and vinegar
- bring to a boil
- lower the heat then add the sugar
- mix until the flavor of the sugar already seeped in and almost starting to caramelize
- add the eggplants
- cover the wok until the eggplant is cooked
- add the laurel leaf
- serve with steamed rice!
