Rhubarb Crisp Recipe
A tart yet sweet tasty dessert served warm with a generous helping of whipped cream to top it off.

Ingredients
  • 1/2 c. butter
  • 1 1/4 c. sugar
  • 2 eggs
  • 1/2 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 2 c. toasted bread cubes
  • 4 c. cornflakes (crushed)
  • 4 c. diced fresh rhubarb

Directions
  1. Blend butter and 1/2 cup of sugar together thoroughly.
  2. Add eggs and beat well.
  3. Blend in nutmeg, vanilla, toasted bread cubes and crushed cornflakes.
  4. Spread half of mixture in buttered baking pans.
  5. Arrange rhubarb evenly over the top.
  6. Sprinkle with remaining sugar and cover with remaining mixture.
  7. Bake in moderate oven (375 degrees) about 40 mins. or until rhubarb is tender.
  8. Serve warm with whipped cream.
