Rhubarb Crisp

- 1/2 c. butter shopping list
- 1 1/4 c. sugar shopping list
- 2 eggs shopping list
- 1/2 tsp. nutmeg shopping list
- 1/2 tsp. vanilla shopping list
- 2 c. toasted bread cubes shopping list
- 4 c. cornflakes (crushed) shopping list
- 4 c. diced fresh rhubarb shopping list
How to make it
- Blend butter and 1/2 cup of sugar together thoroughly.
- Add eggs and beat well.
- Blend in nutmeg, vanilla, toasted bread cubes and crushed cornflakes.
- Spread half of mixture in buttered baking pans.
- Arrange rhubarb evenly over the top.
- Sprinkle with remaining sugar and cover with remaining mixture.
- Bake in moderate oven (375 degrees) about 40 mins. or until rhubarb is tender.
- Serve warm with whipped cream.
