Chicken Liver Pate

- 1 lb. chicken livers shopping list
- 1 onion, chopped shopping list
- 1/2 cup butter shopping list
- 1/4 cup water shopping list
- salt & black pepper to taste( add more black pepper or cayenne) shopping list
- 3 boiled eggs shopping list
- 1/3 cup olive oil shopping list
- 2 green onions, finely chopped shopping list
How to make it
- Saute' livers and onions in butter
- Add water for juice, if needed
- When they are done, add salt & pepper
- Remove them to cool and reserve the juice
- Mince livers with egg whites in food processor
- Mash egg yolks into a smooth paste with olive oil
- Add paste to livers with enough juice to get a spread consistency
- Add green onions
- Put into a 2 qt. mold
- Refrigerate for about an hour
- Serve with assorted crackers
