Lanas Country Brunch Coffee Cake

- COUNTRY coffee cake shopping list
- ============================================ shopping list
- 2 c. light brown sugar shopping list
- 2 c. flour shopping list
- 3/4 c. shortening (can use equivalent in REAL butter shopping list
- NOT margarine) shopping list
- 1 egg shopping list
- 1 tsp. vanilla shopping list
- 1 tsp. almond extract shopping list
- ============================================ shopping list
- 1 c. hot coffee shopping list
- 1 tsp. baking soda shopping list
- toasted almonds (optional) shopping list
- ============================================ shopping list
How to make it
- Mix sugar, flour and shortening until lumpy. Do not mix until creamy. Take out 1 cup for topping.
- Dissolve soda in hot coffee and add to the flour mixture.
- Also add egg and vanilla.
- Spread in sheet pan 9x12x2 inch and sprinkle on topping.
- This is a thin batter. Bake at 325-350 degrees approximately 30 minutes.

- Sprinkle with powdered sugar after baked.OR (better)>>
- Delicious drizzled with cream cheese icing and topped with toasted almonds!

I don't bake but I might try this. When you say soda, are you refering to the drink Coke or baking soda?
