Okra And Tomatoes

- 2 tablespoons olive or canola oil shopping list
- 2 teaspoons minced garlic shopping list
- 1 teaspoon crushed red pepper flakes-or to taste shopping list
- 1 14 1/2oz can crushed or dice tomatoes shopping list
- 3 cups sliced okra-fresh or frozen(thaw first) shopping list
- 1 teaspoon sugar shopping list
- salt shopping list
- pepper shopping list
How to make it
- In a 10" cast iron skillet,heat oil over medium heat.
- Add minced garlic. Saute until garlic turns light brown.
- Add tomatoes and red pepper flakes. Stir.
- Add okra and sugar. Stir gently until well combined. Mixture will be slimy but will lose most of its sliminess as it cooks.
- Season with salt and pepper to taste.
- Bring mixture to a boil then reduce to medium low heat and simmer for 20-25 minutes.
- Add additional salt and pepper if needed.
- Serve hot.
- Traditional southern method:
- Omit oil and fry 2 slices of thick-cut bacon or salt pork until crisp.
- Cut pork into pieces and return to skillet. Do not drain grease.
- Prepare okra and tomatoes as directed.
