How to make it

  • In a 10" cast iron skillet,heat oil over medium heat.
  • Add minced garlic. Saute until garlic turns light brown.
  • Add tomatoes and red pepper flakes. Stir.
  • Add okra and sugar. Stir gently until well combined. Mixture will be slimy but will lose most of its sliminess as it cooks.
  • Season with salt and pepper to taste.
  • Bring mixture to a boil then reduce to medium low heat and simmer for 20-25 minutes.
  • Add additional salt and pepper if needed.
  • Serve hot.
  • Traditional southern method:
  • Omit oil and fry 2 slices of thick-cut bacon or salt pork until crisp.
  • Cut pork into pieces and return to skillet. Do not drain grease.
  • Prepare okra and tomatoes as directed.
