Southern Fried Okra

- 1 pound fresh okra, cut into 1/2 inch thick slices (discard the tips and stem ends) shopping list
- 2 cups buttermilk shopping list
- 1 cup self-rising cornmeal shopping list
- 1 cup self-rising flour shopping list
- 3/4 teaspoon salt shopping list
- 1/4 teaspoon ground red pepper shopping list
- Crisco for frying shopping list
- 1/4 cup bacon drippings shopping list
How to make it
- In bowl, place okra, stirring in buttermilk gently
- Cover, chill for about 40 minutes
- In large bowl, combine cornmeal, flour, salt and pepper, whisk
- Remove okra from buttermilk with slotted spoon, discarding buttermilk
- Dredge okra in batches in the cornmeal mixture
- Spoon Crisco into a Dutch oven or a cast iron skillet (when melted it needs to be about 2 inches depth)
- Add bacon drippings
- Heat on med high or until about 375 degrees
- Fry okra in batches for about 4 minutes or until golden
- Drain on paper towels
