Pat does this by feel.. I had to make her give me measurements. A mix of mixes and some individual tweaks. It is quick and easy but tastes homemade. Of course if you don't have an iron skillet you can do this in a cake pan.

Yummy! I have a HUGE cast iron skillet but I have a hard time picking it up. I love that skillet tho'. I'll have to try doubling this recipe.

Wonderful recipe! Love those cast iron skillets! I make mine almost the same, only I usually just have a white cake mix, and use the drained juice from the pineapple slices as part of my liquid in the cake to get the pineapple flavor into the cake.

Wow, I did not think this recipe would get much interest. It's one of those easy things we do. But I am happy that it struck a chord. As usual, what we do it usual. Nothing fancy, just plain folk cooking. Well, with the occasional exception.

My husbands favorite cake! So far no one can equal his mom's pineapple upside down cake and I won't even try because Mom's have that special touch that can't be duplicated. I bet this recipe will bring me as close as I ever get to it though :)
