How to make it

  • Preheat oven to 350 F
  • Prep cake mix batter as shown on the box
  • In a 10 inch Iron Skillet (or other oven proof skillet), melt the butter & add brown sugar. Mix together.
  • After sugar has melted, arrange the pineapple slices and cherries in the bottom of the skillet.
  • Pour cake mix batter over the top.
  • Put the skillet in the oven and bake until a toothpick inserted in the middle of the mix comes out clean. (about 40 minutes)
  • Using a table knife, cleave around the edge to the skillet to make sure cake will separate.
  • Invert a platter over the top of the skillet, turn the whole assembly over and dump the cake onto the platter.
  • Now you are ready to enjoy!

    My husbands favorite cake! So far no one can equal his mom's pineapple upside down cake and I won't even try because Mom's have that special touch that can't be duplicated. I bet this recipe will bring me as close as I ever get to it though :)

    I've made one of these recently, in pretty much the same way. I grew up with my mother making this and it sounds the same. LOVE it.

    Wow, I did not think this recipe would get much interest. It's one of those easy things we do. But I am happy that it struck a chord. As usual, what we do is usual. Nothing fancy, just plain folk cooking. Well, with the occasional exception.

    Wonderful recipe! Love those cast iron skillets! I make mine almost the same, only I usually just have a white cake mix, and use the drained juice from the pineapple slices as part of my liquid in the cake to get the pineapple flavor into the cake.

    Pat does this by feel.. I had to make her give me measurements. A mix of mixes and some individual tweaks. It is quick and easy but tastes homemade. Of course if you don't have an iron skillet you can do this in a cake pan.
