Skillet Upside Down Cake

- 1 box pineapple cake mix shopping list
- 1 can pineapple rings shopping list
- 1 jar maraschino cherries shopping list
- 1 cup brown sugar shopping list
- 1/2 cup butter shopping list
How to make it
- Preheat oven to 350 F
- Prep cake mix batter as shown on the box
- In a 10 inch Iron Skillet (or other oven proof skillet), melt the butter & add brown sugar. Mix together.
- After sugar has melted, arrange the pineapple slices and cherries in the bottom of the skillet.
- Pour cake mix batter over the top.
- Put the skillet in the oven and bake until a toothpick inserted in the middle of the mix comes out clean. (about 40 minutes)
- Using a table knife, cleave around the edge to the skillet to make sure cake will separate.
- Invert a platter over the top of the skillet, turn the whole assembly over and dump the cake onto the platter.
- Now you are ready to enjoy!

yummy! I have a HUGE cast iron skillet but I have a hard time picking it up. I love that skillet tho'. I'll have to try doubling this recipe.

Wonderful recipe! Love those cast iron skillets! I make mine almost the same, only I usually just have a white cake mix, and use the drained juice from the pineapple slices as part of my liquid in the cake to get the pineapple flavor into the cake.

I've made one of these recently, in pretty much the same way. I grew up with my mother making this and it sounds the same. LOVE it.
