This is a great recipe from Canadian Living. I've been making it for years. I added more veggies so it's a better balanced dish. I also undercook the pasta so it doesn't overcook in the oven. I freeze the leftovers and that works well.

Ingredients
  • 450g rotini
  • 3/4 lb lean ground beef
  • 3/4 lb hot Italian Sausage - either the sausage or the sausage meat
  • 2 cloves of garlic, mashed
  • 1 large white and 1 large red onion
  • 2 sweet red peppers, coarsley chopped
  • carrots, sliced, amount to your taste
  • 1 green pepper, coarsley chopped
  • 1 zucchini, sliced thickly and then quartered
  • 2 large cans of diced tomatoes
  • 12 oz tomato sauce
  • 1 Tbsp fresh thyme or 1/2 tsp dried
  • 1/2 cup chopped fresh parsley
  • 1 tbsp fresh oregano or 1 1/2 tsp dried

Directions
  1. Prepare the rotini according to package directions. Undercook by at least 2 minutes and rinse in cold water.
  2. In a large skillet fry the meat, remove from pan.
  3. Saute the onions and garlic.
  4. Add the rest of the veggies and stir for a few minutes
  5. Add the meat back to the pan and mix well.
  6. Place everything - the meat and veggie mix, the spices but only half of the parsley, the tomatoes and sauce and pasta into a large 4L casserole and mix well.
  7. Can be covered and refrigerated for 3 days.
  8. Bake at 350 oven for 30 minutes.
  9. Sprinkle with the rest of the parsley and serve.
