Blueberry Snack Cake Recipe
This is an easy snack cake-moist & yummy. I add cinnamon to the topping. My family loves anything with blueberries.

Ingredients
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 cups sugar (white or brown)
  • 1/2 cup cold butter
  • 1 tsp. cinnamon (opt.)
  • 1 tsp. baking powder
  • 1 cup milk
  • 2 eggs, separated
  • 2 cups blueberries (fresh or frozen; if using frozen, do not thaw before adding to batter)

Directions
  1. In a mixing bowl, combine flour and sugar
  2. Cut in butter until crumbly
  3. Set aside 3/4 cup for topping (add 1 tsp. cinnamon to topping if desired)
  4. Add the baking powder, milk and egg yolks to remaining mixture; mix well
  5. Best egg whites until soft peaks form; fold into batter
  6. Pour into a greased 9X13 baking dish
  7. Sprinkle with blueberries and reserved crumb mixture
  8. Bake at 350 degrees for 30-35 minutes or until golden brown and a toothpick inserted near the center comes out clean.
