Sunchokes Gratin

- 1 lb. sunchokes shopping list
- 1 small lemon shopping list
- water to boil shopping list
- Pam (or other non-stick spray coating) shopping list
- about 3 tablespoons butter shopping list
- 3 oz. shredded monterey jack cheese shopping list
- salt shopping list
- pepper shopping list
How to make it
- Wash in water and peel sunchokes, placing sunchokes as they are peeled in a pan of cold water with juice of 1 lemon squeezed in. The lemon/water mixture should just cover the sunchokes.
- Boil the sunchokes in the lemon/water mixture for 5-8 minutes until almost done.
- Drain the sunchokes and rinse quickly with water, then slice in even thickness and arrange them in one layer in square baking pan which has been sprayed with Pam.
- Dot with butter.
- Sprinkle cheese evenly over the sunchokes.
- Bake in a 375F oven for about 20 minutes, or until done and covering bubbly as you like.
- Remove from oven and salt and pepper to taste

I Love Sun chokes! They are also good if you braise them in chicken stock with some onions, tumeric, garlic, s&p...yum!
