How to make it

  • fry bacon over medium heat til crisp
  • drain on paper towel, cool, break into bite-size pieces
  • pour off all but 2 tablespoons of the bacon fat
  • saute the onion in the reserved bacon fat
  • stir in clam broth
  • add potatoes
  • bring to low rolling boil and cook til potatoes are fork-tender, about 10 minutes
  • add Tabasco sauce and pepper
  • heat milk and evaporated milk (or cream), add to potatoes along with clams
  • when clams are warm (in a few minutes) stir in shrimp and bacon
  • salt to taste
  • OPTIONAL: reserve some of the bacon for garnish

    If you like seafood chowder, go to my son's blog and look up his chowder recipe. He was just visiting here in WA so I bought him a bunch of seafood and this is what he made. August 9, 2008, at http://www.flotation9.net/sweetfineday/category/recipes/.
