How to make it

  • Combine chopped meat, onion salt and pepper then set aside.
  • Combine flour, baking powder and salt then make well in center of flour.
  • Beat eggs and milk then pour in a steady stream stirring flour in gradually and beat until smooth.
  • Stir in meat mixture then heat oil and butter and drop batter into mixture and fry 3 minutes.
  • Drain on paper towels then serve with salsa and sour cream.

    Never would have thought this one up, but it sounds great. Now you've got my brain tryin' to figure out a version to try and work in sauerkraut and a rye component to get a reuben fritter...a deep fried version of a much loved sammich...hey, we're southern, right, why not! :) Thanks for this and for getting the wheels turning!

    I've never made a fritter and htese sound great. I also have several meat grinders and you say chop the corned beef. Do you think it would be better to grind it? I can't wait to try these!
