Cajun Crawfish Cornbread

- 1 pound crawfish tails shopping list
- 2 cups yellow cornmeal shopping list
- 1 can cream style corn shopping list
- 3 eggs, slightly beaten shopping list
- 1 1/2 cup sharp cheddar cheese, grated shopping list
- 2 jalapeno peppers, finely chopped shopping list
- 3/4 cup onion tops shopping list
- 1 onion, finely chopped shopping list
- 1/2 cup oil shopping list
- 1 cup milk shopping list
- 1 tsp salt shopping list
- 1/2 tsp cajun seasoning (I use Tony Chacheres creole seasoning shopping list
- 3tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
How to make it
- Saute onions in a little butter until onions are transparent. Add jalapeno peppers and set aside.
- Mix together all ingredients, except crawfish.
- Add in cooked onions and peppers, then crawfish.
- Pour into a greased 13x9 pan and bake at 400 degrees for 35-40 minutes or until toothpick in the middle comes out clean.

This a lot like I make crawfish hoe cakes. I stack them two high and smother them with the seafood gravy I posted. Great post.
