Ingredients
  • 2 cups skim milk
  • 2 small apples, cored & diced
  • 4 slices (1 oz each) day old bread, cut into cubes
  • 1/4 cup granulated light brown sugar
  • 1/2 ounce chopped walnuts
  • 1/4 tsp ground cardamom
  • 2 large eggs, lightly beaten
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground nutmeg

Directions
  1. In 4 cup microwave safe measure, microwave milk and apples on High 4 minutes until hot but not boiling. In 6 cup microwave safe soufflé' dish, combine bread, sugar, walnuts and cardamom; set aside. In small bowl, combine eggs and vanilla; gradually whisk 1/2 cup hot milk into the egg mixture. Stir egg mixture into remaining milk. Add nutmeg and milk mixture to soufflé' dish, stirring to combine. Microwave on High 2 minutes, stirring once; microwave on Medium 1 1/2 minutes; gently push outer edges toward center; microwave on Medium
  2. 1 1/2 minutes longer, until almost set in middle. Do not overcook. Let stand 30 minutes; serve warm or cold.
