Peanut Butter Layer Cake Recipe

Ingredients

1/2 cup butter, softened

1 1/4 cups sugar

1/2 cup peanut butter chips , melted

2 eggs

1 tsp. vanilla

2 cups all-purpose flour

1 tsp. baking soda

1/2 tsp. baking powder

1/4 tsp. salt

1 1/2 cups milk

Peanut Butter Frosting:

1 cup peanut butter chips, melted

1 pkg. (8-oz.) cream cheese, softened

1 tsp. vanilla

1/8 tsp. salt

3 cups confectioners sugar

2-3 Tbsp. milk

Directions

In a large mixing bowl, cream butter and sugar until light and fluffy.

Add melted peanut buitter chips; mix well.

Add eggs, one at a time, beating well after each addition.

Beat in vanilla.

Combine the flour, baking soda, baking powder and salt; add to creamed mixture alternately with milk.

Pour into two greased and floured 9-in. round cake pans.

Bake at 350 degrees for 30-35 minutes or until toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from pans to wire racks to cool completely.

For Frosting:

In a small mixing bowl, beat the melted chips, cream cheese, vanilla and salt until light and fluffy.

Add confectioners sugar alternately with enough milk to achieve spreading consistency.

Spread frosting between layers and over top and sides of cake.

NOTE: To change the cake a bit, I will frost it with chocolate frosting and garnish around the top edges with chopped or crushed peanuts. Its quite good!

This sounds really yummy! You could make it a PB&J cake and add warmed jelly in between the layers and PB frosting for the rest of the cake. Mmmmm...gonna have to make this soon! Thanks for sharing! ~Laura ;D
