Peanut Butter Layer Cake

- 1/2 cup butter, softened shopping list
- 1 1/4 cups sugar shopping list
- 1/2 cup peanut butter chips , melted shopping list
- 2 eggs shopping list
- 1 tsp. vanilla shopping list
- 2 cups all-purpose flour shopping list
- 1 tsp. baking soda shopping list
- 1/2 tsp. baking powder shopping list
- 1/4 tsp. salt shopping list
- 1 1/2 cups milk shopping list
- peanut butter Frosting: shopping list
- 1 cup peanut butter chips, melted shopping list
- 1 pkg. (8-oz.) cream cheese, softened shopping list
- 1 tsp. vanilla shopping list
- 1/8 tsp. salt shopping list
- 3 cups confectioners sugar shopping list
- 2-3 Tbsp. milk shopping list
How to make it
- In a large mixing bowl, cream butter and sugar until light and fluffy.
- Add melted peanut buitter chips; mix well.
- Add eggs, one at a time, beating well after each addition.
- Beat in vanilla.
- Combine the flour, baking soda, baking powder and salt; add to creamed mixture alternately with milk.
- Pour into two greased and floured 9-in. round cake pans.
- Bake at 350 degrees for 30-35 minutes or until toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from pans to wire racks to cool completely.
- For Frosting:
- In a small mixing bowl, beat the melted chips, cream cheese, vanilla and salt until light and fluffy.
- Add confectioners sugar alternately with enough milk to achieve spreading consistency.
- Spread frosting between layers and over top and sides of cake.
- NOTE: To change the cake a bit, I will frost it with chocolate frosting and garnish around the top edges with chopped or crushed peanuts. Its quite good!

This sounds really yummy! You could make it a PB&J cake and add warmed jelly in between the layers and PB frosting for the rest of the cake. Mmmmm...gonna have to make this soon! Thanks for sharing! ~Laura ;D
