Tilapia And Veggies

- 4-8 tilapia fillets (if they're small, I use two per person) shopping list
- Diced bell peppers (all or any colors) shopping list
- Chopped yellow onion shopping list
- Minced garlic shopping list
- juice of one lemon shopping list
- white wine (opt) shopping list
- salt/Pepper shopping list
- 1 Tbs capers (opt) shopping list
- Chopped artichoke (opt) shopping list
- Diced tomato (fresh or canned) (opt) shopping list
- Any other chopped veggie you have on hand shopping list
How to make it
- This is so easy and can be made a hundred different ways!
- Preheat oven to 350
- Saute onion, peppers, garlic and any other veggies that you have on hand in EVOO...I often use artichoke, broccoli and tomato
- Add salt and pepper to veggies
- Add any fresh herbs that you like
- Add juice of one lemon
- Add white wine and let cook down for a minute or two
- Place each fish fillet individually, in the center of its own, large, piece of parchment paper or foil. (if fish are small, use two, one on top of the other)
- Season fish with salt and pepper or Tony Chachere and top with large spoonful of veggies
- Wrap sides of parchment or foil around fish to make individual boats, trying to seal all sides
- Bake for 20-25 minutes, until the fish flakes easily with a fork

My daughter and I have been doing this in an open fry pan with garlic, mushrooms, red bell peppers and new potatoes....it comes out great with vegies piled all over the frying tilapia.....this version looks even better.....can hardly wait to try this...more
