How to make it

  • Preheat oven to 450 then place peppers on foiled lined baking sheet and bake 20 minutes.
  • Remove from oven and place peppers in paper bag then seal and set aside 15 minutes.
  • Peel off skins then remove stems and seeds and cut into 1” pieces.
  • Combine peppers with remaining ingredients then mix thoroughly.
  • Cover and refrigerate 1 hour then arrange lettuce leaves on platter and top with salad.
