Creamy Kale And Chicken Dinner

- 6 boneless skinless chicken breast, butterflied into halves shopping list
- 1 cup skim milk shopping list
- 1/2 cup chicken broth shopping list
- 2 small shallots, chopped shopping list
- 4 cups kale, washed and chopped shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 1/4 teaspoon nutmeg shopping list
- 1/8 teaspoon dried chilli flakes shopping list
- 1 clove of garlic, minced shopping list
- 1 tsp olive oil shopping list
- salt and pepper shopping list
How to make it
- Heat medium non-stick skillet and add oil. Salt and pepper both sides of the chicken.
- Cook chicken in skillet 2 minutes on each side
- Reduce heat to medium-low and add in milk, broth, garlic, chilli flakes and shallots. Cook about 5 minutes, turning chicken occasionally.
- Stir in kale and cook 3 minutes uncovered until Kale is completely wilted and juice of chicken is no longer pink when centers of thickest pieces are cut.
- Remove chicken from skillet; keep warm.
- Increase heat to medium and ook kale mixture about 3 minutes or until liquid has almost evaporated.
- Stir in salt, pepper and nutmeg.
- Serve chicken on spinach along with wild rice or sweet potatoe mash.
