How to make it

  • Melt butter in a large skillet over medium high heat, being careful not to let it scorch or burn.
  • Cook onion and celery in the melted butter for about 3 minutes, or until the onion becomes transparent.
  • Add broth, salt and pepper and bring to a boil.
  • While waiting for the broth to boil, place flour in a small bowl.
  • Gradually stir in milk, mixing thoroughly.
  • Stir in egg, mix well and set aside.
  • When your broth boils, add cooked chicken and noodles.
  • Bring back to a boil, then gradually stir in flour mixture to thicken, and bring back to a boil once again.
  • Add the peas and carrots and stir gently.
  • Heat thoroughly and serve hot.
  • Cold weather comfort food option: Follow directions above, then place mixture in a baking dish. Top with unbaked biscuits of your choice. Place in oven and bake according to biscuit baking directions.
