Coconut Blondies

- 2 sticks (1/2lb) butter shopping list
- 2 c packed brown sugar shopping list
- 1 tsp pure vanilla extract shopping list
- 2 large eggs shopping list
- 1 1/2 c AP flour shopping list
- 3/4 tsp bakingg soda shopping list
- 1/2 tsp salt shopping list
- 1 1/2 c pecans toasted shopping list
- 2 cups sweetened flaked coconut, divided shopping list
How to make it
- Preheat over to 350 with rack in middle. Butter and flour a 13x9 baking pan
- Melt butter in a heavy 3 qt saucepan over low heat, stirring, until smooth. Remove from heat and cool to lukewarm. Whisk in brown sugar and vanilla.
- Whisk in eggs 1 at a time until mixture is glossy and smooth.
- Whisk together flour, baking soda, and salt, then whisk into butter mixture. Stir in pecans and 1 1/2 c coconut.
- Spread in pan and sprinkle with remaining coconut. Bake until a pick inserted in center comes out clean, about 35 mins. Cool Completely.
