Avocado Pasta Salad

- 1 lb bag dry pasta shopping list
- 1/2 cup crumbled feta cheese shopping list
- 1/2 pint cherry tomatoes cut in eighths shopping list
- 1 bunch green onions, ends removed, thinly sliced shopping list
- 1 to 2 ripe avocados, peeled and chopped shopping list
- Dressing: shopping list
- 2 to 3 Tbsp Country French vinaigrette (Penzy's) shopping list
- 2 to 3 Tbsp water shopping list
- 3 to 4 Tbsp balsamic or red wine vinegar shopping list
- 1 cup light mayonnaise shopping list
- 1/4 cup olive oil shopping list
- 1 Tbsp honey shopping list
How to make it
- Boil the pasta according to the package directions. While it is cooking, clean and chop the vegetables and crumble the cheese. In a large serving bowl, mix the Country French Dressing Base with water, let stand a few minutes, then whisk in the rest of the dressing ingredients. Drain and rinse the pasta, toss with dressing, add onions, tomatoes, avocado and cheese, then toss again and serve.
