Ingredients

How to make it

  • skin the chicken breasts and boil in a pot of water until thoroughly cooked, check by cutting through meat and checking for pinkness
  • meanwhile heat olive oil in large skillet and add pepper and onion
  • cook pepper and onion until tender and set aside
  • remove chicken breasts from pot and shred meat off the bones using two forks **or**let chicken cool off and shred with fingers **or**be like me and curse while you alternate between hot chicken shreading and cold water on hands
  • reheat pan with onions and peppers in it
  • add shredded chicken to pan, toss with onions and peppers and season with sazon, adobo, pepper and chilli powder
  • warm tortillas over very low heat in large non-stick pan
  • to serve spoon chicken in middle of tortilla, sprinkle with cheese, pour a little taco sauce down middle, dollop of sour cream along the line and sprinkle with chopped tomato
  • roll em up and eat!
  • leftovers are good next day
