Shrimp And Scallops In Ginger Lime Sauce Recipe

Ingredients
  • 3 Tbs margarine, softened
  • 1 Tbs fresh ginger, or (2 tsp ground)
  • 2 tsp lime zest
  • 1 Tbs EVOO
  • 3 Tbs lime juice
  • 1 lb medium fresh shrimp, peeled and deveined
  • 1 lb scallops
  • Salt and pepper to taste
  • 1 Tbs parsley
  • 8 ounces angel hair pasta

Directions
  1. Combine 2 Tbs margarine, ginger and lime zest.
  2. Refrigerate for 1 hour
  3. Cook pasta according to pkg directions
  4. Heat pan and add EVOO, 1 Tbs margarine and lime juice
  5. Stir until heated through
  6. Add shrimp and sear until turning pink
  7. add scallops
  8. season with salt and pepper to taste
  9. add lime/ginger/margarine mixture
  10. Cook 1-3 minutes until scallops are cooked through
  11. Sprinkle with parsley
  12. Serve over pasta
