Gorgonzola Sauce

- 4c heavy cream shopping list
- 3-4oz. gorgonzola cheese shopping list
- 3Tbs freshly grated parmesan cheese shopping list
- 3/4tsp kosher salt shopping list
- 3/4tsp fresh ground pepper shopping list
- 3Tbs minced fresh parsley. shopping list
How to make it
- Bring heavy cream to a boil (full) in medium saucepan over med-high heat,then continue to boil rapidly 40-50 mins until thickened like white sauce(may take less,watch it),stirring occasionally. Off the heat,add gorgonzola,parmesan,salt,pepper and parsley. Whisk rapidly unti the cheeses melt and serve warm.
- If you reheat,warm over low heat until melted,then whisk vigorously until sauce comes together.

I've had this sauce served over steak and it is sublime. Letting it reduce enough is the challenge. I want to eat it right out of the pot.
