Gorgonzola Sauce Recipe
Wonderful gorgonzola cheese sauce. Great on pasted or spooned over chicken breasts,even pork chops. great right off the spoon!!

Ingredients
  • 4c heavy cream
  • 3-4oz. gorgonzola cheese
  • 3Tbs freshly grated parmesan cheese
  • 3/4tsp kosher salt
  • 3/4tsp fresh ground pepper
  • 3Tbs minced fresh parsley.

Directions
  1. Bring heavy cream to a boil (full) in medium saucepan over med-high heat,then continue to boil rapidly 40-50 mins until thickened like white sauce(may take less,watch it),stirring occasionally. Off the heat,add gorgonzola,parmesan,salt,pepper and parsley. Whisk rapidly unti the cheeses melt and serve warm.
  2. If you reheat,warm over low heat until melted,then whisk vigorously until sauce comes together.

I've had this sauce served over steak and it is sublime. Letting it reduce enough is the challenge. I want to eat it right out of the pot.
