Moroccan Chicken Crockpot Recipe
I found this recipe a few years ago and have made this dish time and time again. It's a wonderful winter warmer and will fill your kitchen with a delicious earthy aroma. Best served on top of hot couscous.

Ingredients
  • 4 x boneless chicken thighs, skin off and cut into 1"cubes
  • 1 x 14.5 oz can of tomatoes, diced
  • 1 x 14.5oz can chickpeas (garbanzo beans), rinsed and drained
  • 1 x large red capsicum (red bell pepper), cut into 1" squares
  • 1 x med. red onion, chopped
  • 1/4 cup x golden raisins
  • 2 tblsp x tomato paste
  • 1/2 cup x water
  • 1.5 tspn x ground cumin
  • 1 tspn x paprika
  • 2 tblsp x peanut or almond or cashew butter
  • 3 tblsp chopped fresh coriander (cilantro)

Directions
  1. Put chickpeas, tomatoes, capsicum, raisins, onion, paste, water, cumin & paprika into crock pot; stir well.
  2. Add chicken and stir into mix making sure chicken is covered
  3. Cover & cook till chicken is tender, 6-7 hours.
  4. Stir in nut butter. Serve hot over couscous garnished with coriander.
