Citrus-Grilled Salmon Recipe
This dish is very easy to double, but this particular recipe is perfect when cooking for 2. Add some rice pilaf & a green vegetable or tossed salad with wheat rolls..voila!

Ingredients
  • 1 pound salmon fillets
  • 1/4 C olive oil
  • 1/4 C lemon juice
  • 1/4 C white wine
  • 1.5 T minced fresh parsley
  • 3/4 t minced fresh rosemary
  • 1/4 t salt
  • 1/8 t crushed red pepper flakes

Directions
  1. Place salmon in a shallow dish.
  2. Combine remaining ingredients and mix well.
  3. Set aside 1/4 cup for basting; pour the rest over the salmon.
  4. Cover and refrigerate for 30 minutes.
  5. Drain, discarding marinade.
  6. Grill salmon over medium coals, skin side down, for 15-20 minutes or until fish flakes easily with a fork.
  7. Baste occasionally with reserved marinade.
  8. ** also cooks really well on an electric grill, just make sure you spray the surface with a non-stick spray & preheat the grill until very hot.
