Goat Cheese and Zucchini Frittata

- 2 eggs shopping list
- sea salt and freshly ground pepper, to taste shopping list
- 1 TB extra virgin olive oil shopping list
- a few thin slices of red onion shopping list
- 1/2 medium zucchini, thinly sliced shopping list
- 1 oz organic fresh goat cheese shopping list
- 1 roasted red pepper, chopped shopping list
- small handful of any fresh herb you have on hand: ex parsley and chives or rosemary shopping list
How to make it
- Beat eggs and season well. Heat olive oil in small non-stick cooking pan (cast iron skillet works well if you have one). Cook onion and zucchini to soften (2-3 min) Add eggs and cook 1-2 minutes until almost set. Dot with goat cheese and roasted red pepper, then sprinkle with herbs. Place under broiler for 2-3 minutes until golden. Serve with green salad.

This is most excellent - love goat cheese -can't get enough, and with all the fresh zucchini in the stores right now at affordable prices, this is a must have..thanks for sharing a delicious quick meal and recipe!
