This recipe, from Julie Hasson's "125 Best Cupcake Recipes," was the first batch of cupcakes I ever baked. They were so delicious!

Ingredients
  • Muffin pans for 18 cupcakes
  • 18 paper or foil cupcake liners
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup milk
  • 1 container chocolate frosting
  • FILLING:
  • 8 oz cream cheese, at room temperature
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 cup semisweet chocolate chips

Directions
  1. BATTER: In a small bowl, mix together flour, baking powder and salt.
  2. In a large bowl, whisk together sugar, butter, eggs, and vanilla until smooth.
  3. Alternately beat in flour mixture and milk, making three additions of flour mixture and two of milk, beating until smooth.
  4. Scoop batter into prepared pans, smoothing tops.
  5. FILLING: in a bowl, using an electric mixer, beat together cream cheese and sugar until smooth.
  6. Add egg, beating well.
  7. Stir in chocolate chips.
  8. Top each cupcake with a scoop of cream cheese filling, smoothing top.
  9. Bake in preheated oven at 350 degrees for 20-25 minutes or until cupcakes are puffed and golden, and cream cheese centers are just beginning to crack slightly and feel firm to the touch.
  10. Let cool in pan on rack for 10 minutes.
  11. Remove from pan and let cool completely on rack.
  12. Top cooled cupcakes with chocolate frosting.

These sound so good!


So, I thought these would be great. Not really. The batter was difficult to smooth the tops, it wasn't all what I expected. The batter was really good tasting, but you could get the same effect of the "filling" by just adding in chocolate chips without the added expense of cream cheese. For me it was a waste of time and ingredients; BUT, my husband liked them and ate a whole bunch, which says a lot because he usually doesn't like sweets.
