Chicken In Batter With Sweet And Sour Sauce Recipe

With the Olympics coming up I thought I'd post an appropriate recipe.

Ingredients
  • 2 stalks celery, sliced
  • 2 medium carrots, sliced
  • 1 green/red pepper, cut into strips
  • 3/4 cup flour
  • 2 garlic cloves, minced
  • 1 egg, beaten
  • 1/2 tsp. ginger powder
  • Note: I also add slivers of fresh or candied ginger
  • a pinch of salt
  • 3/4 tsp. pepper
  • 4 chicken breast fillets
  • 1 cup oil
  • 1-1/2 cup water
  • 1/2 cup packed brown sugar
  • 2/3 cup apple cider vinegar
  • 1 (16 oz.) can tomatoes
  • 1 cup water
  • 1/2 cup cornstarch
  • 1/8 tsp. salt

Directions
  1. Cook vegetables in small amount of water in saucepan, until tender crisp.
  2. Drain and set aside.
  3. Combine flour, garlic, egg, ginger, salt and pepper in bowl and mix well.
  4. Pound chicken fillets with a mallet.
  5. Cut into strips.
  6. Dip into batter, coating well.
  7. Brown lightly in hot oil in wok.
  8. Drain on paper towels.
  9. Bring 1-1/2 cups water in a saucepan to a boil and stir in brown sugar.
  10. Cook for 1 minute.
  11. Add vinegar and tomatoes and bring to a boil again.
  12. Note: I like to add a spoonful of fermented black bean sauce at this point.
  13. Stir in mixture of cornstarch and remaining 1 cup water, gradually.
  14. Cook for 3 minutes, stirring constantly.
  15. Add chicken, vegetables and a pinch of salt.
  16. Cook until heated through.
  17. Serve over cooked rice or noodles.
  18. Note: Cooking time includes everything

Love sweet and sour chicken - will be fun to try to make it at home (especially since we aren't eating in restauratns near as often these days!)..thanks!


Excellent recipe Peepers and I am right there with Krumkake. No more restaurant foods for us either. We have opted to eat our "clean" and "properly cooked" foods at home and this recipe looks like one I know my family and I will love. HIGH 5!
